Bleu des Causses hard_cheese Extra Virgin Olive Oil andProduced in the Languedoc region of France, the blue veins are made using the same Penicillium roqueforti as the well known Roquefort. It's a semi soft blue cheese which is not quite as spicy and has a much creamier texture than its cousin, but don't let this fool you.
